Mas' Mango Dressing
1c. puree of fresh mango (1-2 whole mangoes, diced, pureed)
1c. mango juice or nectar
1c. aged sherry vinegar
1c. extra virgin olive oil
s/p to taste
combine all liquid ingredients in a stand mixer, blender, food processor, or using an immersion blender, combine until emulsified. salt and pepper to taste. if too thick, add a little spring water to thin. it should coat the back of a spinach leaf and stick. finished, it shouldn't be too sweet but be balanced between sweet and sour.
